Standing sushi
立ち食い鮨 たちぐいずし
Food · Local life
The Edo original — sushi was street food eaten standing — revived in Tokyo's stand-up counters: a chef, a counter at chest height, twelve pieces in twenty minutes for a fraction of the omakase price, no booking, and a queue that moves. Ameyoko, Tsukiji, Shibuya and the arches under Yurakucho have the ones the office workers use.

Shibuya
Umegaoka Sushi no Midori Shibuya (standing bar)
梅丘寿司の美登利 渋谷店(立ち食い)
¥¥ · 30 min · English: partial
The standing-bar ("tachi-mise") format of the well-known Umegaoka Sushi no Midori chain, located inside Mark City directly above Shibuya Station. It keeps the brand's signature high-quality-for-the-price nigiri but in a quick, no-seat, pay-as-you-go standing format rather than a full sit-down meal.
Shibuya
Uogashi Nihon-Ichi Shibuya Dogenzaka
魚がし日本一 渋谷道玄坂店
¥ · 20 min · English: partial
A branch of Uogashi Nihon-Ichi, the chain widely credited with popularizing the modern "standing sushi bar" format in Tokyo as an affordable, fast alternative to sit-down sushiya. The Dogenzaka shop keeps the original per-piece counter service rather than a conveyor-belt format.
