A sake-pairing dinner
日本酒ペアリングの夕食 にほんしゅぺありんぐのゆうしょく
Food · High-end · Book ahead
A washoku course in which each of eight dishes arrives with a different sake — a sparkling to start, a nama with the sashimi, an aged koshu with the grilled course, a sweet nigori with dessert — poured and explained by a sommelier. A few restaurants in Nihonbashi, Ginza and Kagurazaka do it seriously; it is the fastest education in sake there is.

Where to book it
Ginza
Ginza Kuki
銀座 豉 KUKI
¥¥¥ · 120 min · English: yes
A Ginza restaurant built around fermentation and aged ingredients (miso, koji) that offers a structured sake-pairing course of five or seven glasses matched to the tasting menu, rather than sake as an afterthought drinks list. The dedicated English site and multiple pairing tiers are aimed squarely at guests who want the pairing explained.
Kagurazaka
Kojitsu Kaiseki Osaketo Kagurazaka
個室会席 和食日和 おさけと 神楽坂
¥¥¥ · 120 min · English: no
A Kagurazaka kaiseki restaurant built entirely around private-room dining paired with a curated sake list, including a sake-based dessert, rather than treating sake as an afterthought. The backstreet setting and room format suit a quiet, unhurried pairing dinner away from the main tourist strip.
